
Chocolate Peanut Butter
Hemp Balls
Rich, decadent, cold and sweet- this is my kind of dessert. These dangerously small hemp bites are great on the go, or the perfect little sweet treat after dinner. Only made with the good stuff- they are so simple and versatile. You can use the same base to make an endless amount of delicious vegan desserts!
What You'll Need

2 cups ripe packed medjool dates

1/4 cup cacao powder

1/2 TSP cinnamon

1/8 TSP salt

1/2 TSP vanilla extract

1/2 cup walnuts

1 TBSP peanut butter

1/3 cup hemp hearts (for coating)
As usual, these measurements can be modified to get the desired consistency. If your medjool dates are little dry; you can soak them in a bit of boiling water before-hand to make a thick paste. The more walnuts you add, the drier and more crumbly the mixture will be.

Roast the walnuts in the oven at 350°F until toasted and fragrant (~10 min). In the meantime, remove the pits from the medjool dates if they are not already pitted.

Put all the ingredients into a food processor and blend until well combined

Your mixture will look completely different depending on the ripeness of the dates and ratio of dates to nuts. More nuts=more dry, riper dates=more sticky/wet. Keep in mind you can swap the walnuts for other nuts like hazelnuts or pecans :)
Now simply shape the mixture into whatever form your heart desires. I sometimes press it into the lower half of muffin tins to make small circular brownies; But you can also form it into a large flat square/rectangle to later slice into bars... that you could dip in chocolate & coconut ! The options are endless

In this version I rolled the mix into ~1inch wide balls (which made ~30 balls) that I rolled in hemp hearts- but you can roll them in anything you like.

Freeze for ~6 hours and enjoy cold with tea or nut milk :)
